Versatile Homemade Seiten


Seiten that is so Fast and Easy! Plus you can flavor it to suit your recipe.

I love seiten but I don’t love buying it all the time. I keep hearing it is so easy to make, especially if you have a steamer. I had one hidden in the pile of stuff in our dark scary basement and had been lacking the motivation to find it. But I couldn’t take it anymore I had to conquer seiten! So I but my brave face on and made my husband go down with me and find that darned electric steamer! I’m so glad I did!

The first recipe I tried and of course altered because I can’t follow a recipe to save my life wasn’t amazing. It was to dry and the flavor was lacking. I took those techniques and tried again. This time the result was delicious! Mouth watering, juicy and flavorful seiten that I can’t get enough of.

Here is the recipe:

Ingredients: 3/4 Onion of medium size Garlic minced (I always use heaps) Olive oil Salt and Pepper Thyme Chili powder (a little if you don’t like much heat and a lot if you like it with a bit of a kick. I did somewhat in the middle) Organic No Salt Seasoning from Costco

1/2 cup of Nutritional Yeast 1/4 cup of Chic pea flour 1 1/2 cup of Veggie Stock 1 1/2 cup of vital wheat gluten

Directions:

  1. Saute onion, garlic, olive oil until onions are tender (a few min) then add the spices and cook for a few more min until the spices have gotten a little heat. Stir to make sure you don’t burn the garlic.

  2. In your food processor add the onion mixture plus the nutritional yeast, chic pea flour, and veggie stock. Process until the mixture is pureed.

  3. In a bowl add the puree to the vital wheat gluten and mix it up until it is ready to knead. Knead for a few min. The dough should be moist but not sticking to anything.

  4. Form into a square roll that will fit into your steamer. Double wrap it in foil. This time I wrapped it a bit loose so it had room to expand if it so felt the need. This seemed to work well. Steam for 30 min and then flip and steam for another 30 min.

  5. Let cool and wrap in plastic wrap as well as a baggie and put in your fridge. Or freeze it. It seems like is it is good in the fridge for about a week and in the freezer for a few months.

What do you do with this seiten recipe?

I sliced mine in about 1/4 inch thick strips and then sauteed for a few min. Then I made homemade 1000 island, got out my sauerkraut and made some delicious Rubens! I’m still dreaming of them!

This seiten recipe had a mild moist hearty flavor. Also a good substitute for chicken. It reminded me of the Uptown’s Naturals chick seiten I buy at the store. I think by playing with spices you could get any flavor you want. I’ll update this post with new rounds experimenting with different flavors. I want to master a bacon seiten!

UPDATE: Last night I made BBQ seiten sandwiches with this exact recipe and they were mouth watering! I sliced the seiten loaf in thin slices and sauteed in avocado oil for a few min until slightly brown but still very tender. Then I added some Annie’s BBQ sauce into the skillet and let it simmer while I toasted the bread. I added dill pickles that I canned and that was it! I kept mine a little on the less saucy side, but would be so good slathered in BBQ sauce!
